I made strawberry jam this year, too!
I tried it with sliced "Yudane bread" of "Tsukushi-pan".
Yudane bread was made with wheat flour dough which was knead with hot water.
Strawberries remain their shapes perfectly!
And the raw fresh white bread was bouncy and chewy!
Both were really tasty.
Since I bought many strawberries, I made a cake with some of them, too.
